Qualitative and Nutritional Evaluation of Paddlefish (Polyodon spathula) Meat Production

Polyodon spathula is a valuable species of sturgeon native to North America that has acclimatized very well in Europe. Detailed knowledge the quantitative and qualitative productive performance paddlefish meat interest. Through this article, we aimed highlight chemical composition, cholesterol, collagen content fillets issued from aged two three summers highlight, as nutritional value, profile fatty acids amino acids, sanogenic indices biological value proteins for epaxial hypaxial muscle groups. Also, these fish are quality young adult consumers (EAA index 156.11; Biological Value 158.46; Nutritional (%) 28.30) enough children (Essential Amino 96.41; 93.39; 17.45).
